  • ½ pound bacon, chopped
  • 1 pound ground beef
  • 4 cups chicken broth
  • 1 cup unsweetened almond milk, (or milk of choice)
  • 1 head cauliflower, chopped into bite-size pieces (about 1 pound)
  • 1 teaspoon dried parsley
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup heavy cream
  • 2 cups cheddar cheese, shredded

Instructions
 

  • In a large Dutch oven or pot over medium heat, cook chopped bacon until crispy. Drain the grease.

  • Add the ground beef, and cook for 8-10 minutes until browned, breaking the beef up with a wooden spoon. Drain excess grease (optional).

  • Add the chicken broth, almond milk, cauliflower, dried parsley, salt, and black pepper. Bring to a boil, then reduce to a simmer for 10-15 minutes until cauliflower is tender.

  • Remove from heat. Add the heavy cream and cheddar cheese. Stir until well combined and the cheese is melted.
