Low-carb chicken cordon bleu casserole [Keto]
*Net carbs are per serving
Ingredients
- 3 tablespoons butter
- 1 pound chicken breast, diced
- 12 ounces ham steak, diced
- 8 ounces mushrooms, sliced
- ½ cup onion, chopped
- 1 large head cauliflower, chopped into florets (about 2 pounds)
- 1¼ cups heavy cream, divided
- ½ cup sour cream
- 1 cup Parmesan cheese, grated and divided
- 8 ounces Swiss cheese, grated and divided
- 3 cloves garlic, minced
- 1 teaspoon dried tarragon
- salt and black pepper
Optional garnish: chopped fresh parsley
Instructions
- Preheat your oven to 350F/177C.
- In a large skillet over medium heat, melt the butter. Once the butter has melted, add the chicken and cook until browned on all sides.
- Add the ham steak, mushrooms, and onions to the skillet. Cook until the mushrooms have browned and stopped releasing moisture, about 6-8 minutes.
- Meanwhile, boil water in a large saucepan or pot. Once boiling, add the chopped cauliflower and reduce heat to a low boil. Boil for 8 minutes. Remove from heat and drain.
- Return the cauliflower to the pot and add 1/4 cup of the heavy cream. Mash the cauliflower using a potato masher until mostly smooth.
- In a small saucepan over medium-low heat, add the rest of the heavy cream, sour cream, half of the Parmesan cheese, half of the Swiss cheese, garlic, dried tarragon, salt, and pepper. Cook about 10 minutes, stirring frequently, or until the sauce has reduced and thickened.
- Add the chicken and ham mixture, the mashed cauliflower, and the cheese sauce to a large casserole dish. Mix until well combined. Top with the remaining Parmesan cheese and Swiss cheese.
- Bake for 25 minutes or until golden. Garnish with parsley. Enjoy!

Notes
Save time and effort in the kitchen by using the same large saucepan for different parts of the recipe. Once you’ve cooked the cauliflower, transfer it to the casserole dish and wipe the saucepan clean. Then, use the same pan to make the creamy cheese sauce. This way, you’ll need fewer pots and pans to make this dish.

Additional Details
Our low-carb chicken cordon bleu casserole is a delightful twist on the classic recipe. It offers a savory blend of flavors in a health-conscious dish. Whether you’re an experienced chef or new to cooking, this casserole provides a satisfying meal while supporting your wellness goals.
The origins of the chicken cordon bleu trace back to French cuisine, where it gained popularity for its combination of chicken, ham, and cheese. Traditionally, this dish involves wrapping chicken around ham and cheese, then breading and frying it. However, the breadcrumb coating and frying process often make it high in carbs. To address this, we’ve developed a casserole variation, a more convenient and lower-carb option that preserves the essence of the original dish.

Our casserole features a mix of ingredients carefully chosen for flavor and health benefits.

- Parmesan and Swiss cheeses: Bring richness and taste to the dish, offering calcium for strong bones.
- Heavy cream and sour cream: Make the sauce creamy without adding too many carbs.
- Garlic: Adds flavor and potential health benefits, like helping the immune system and heart.
