Notes

Save time and effort in the kitchen by using the same large saucepan for different parts of the recipe. Once you’ve cooked the cauliflower, transfer it to the casserole dish and wipe the saucepan clean. Then, use the same pan to make the creamy cheese sauce. This way, you’ll need fewer pots and pans to make this dish.

Additional Details

Our low-carb chicken cordon bleu casserole is a delightful twist on the classic recipe. It offers a savory blend of flavors in a health-conscious dish. Whether you’re an experienced chef or new to cooking, this casserole provides a satisfying meal while supporting your wellness goals.

The origins of the chicken cordon bleu trace back to French cuisine, where it gained popularity for its combination of chicken, ham, and cheese. Traditionally, this dish involves wrapping chicken around ham and cheese, then breading and frying it. However, the breadcrumb coating and frying process often make it high in carbs. To address this, we’ve developed a casserole variation, a more convenient and lower-carb option that preserves the essence of the original dish.

Details about ingredients

Our casserole features a mix of ingredients carefully chosen for flavor and health benefits.

  • Chicken breast: Provides protein for muscle health and feeling full.
  • Ham: Adds flavor and more protein to the dish.
  • Cauliflower: Acts as a low-carb replacement for breadcrumbs, packed with nutrients like vitamins and fiber.
  • Parmesan and Swiss cheeses: Bring richness and taste to the dish, offering calcium for strong bones.
  • Heavy cream and sour cream: Make the sauce creamy without adding too many carbs.
  • Garlic: Adds flavor and potential health benefits, like helping the immune system and heart.

Variations

  • Try using turkey instead of chicken for a lighter option.
  • Add colorful bell peppers for extra flavor and crunch.
  • Experiment with spinach, broccoli, or zucchini for a vegetarian-friendly version.
  • Swap out the ham for cooked bacon for a different twist on the classic recipe.
  • Incorporate different cheese varieties, such as cheddar or mozzarella, to personalize the flavor profile.

Serving pairings

  • Fresh green salad with a tangy vinaigrette to contrast the richness of the casserole.
  • Steamed asparagus or roasted Brussels sprouts for added nutrition and color.
  • Garlic butter sautéed green beans as a flavorful side dish.
  • Sliced avocado or tomato salad for a refreshing addition.

Benefits for people with diabetes

Our low-carb chicken cordon bleu casserole offers several advantages for those with diabetes. By using low-carb ingredients like cauliflower instead of traditional breadcrumbs, we help individuals manage their blood sugar levels more effectively. Additionally, the balanced combination of lean protein from the chicken and ham, along with the rich cheese sauce, provides a satisfying meal that won’t cause drastic spikes in blood sugar.
