  • 3 tablespoons butter
  • 1 pound chicken breast, diced
  • 12 ounces ham steak, diced
  • 8 ounces mushrooms, sliced
  • ½ cup onion, chopped
  • 1 large head cauliflower, chopped into florets (about 2 pounds)
  • 1¼ cups heavy cream, divided
  • ½ cup sour cream
  • 1 cup Parmesan cheese, grated and divided
  • 8 ounces Swiss cheese, grated and divided
  • 3 cloves garlic, minced
  • 1 teaspoon dried tarragon
  • salt and black pepper

Optional garnish: chopped fresh parsley

Instructions
 

  • Preheat your oven to 350F/177C.

  • In a large skillet over medium heat, melt the butter. Once the butter has melted, add the chicken and cook until browned on all sides.

  • Add the ham steak, mushrooms, and onions to the skillet. Cook until the mushrooms have browned and stopped releasing moisture, about 6-8 minutes.

  • Meanwhile, boil water in a large saucepan or pot. Once boiling, add the chopped cauliflower and reduce heat to a low boil. Boil for 8 minutes. Remove from heat and drain.

  • Return the cauliflower to the pot and add 1/4 cup of the heavy cream. Mash the cauliflower using a potato masher until mostly smooth.

  • In a small saucepan over medium-low heat, add the rest of the heavy cream, sour cream, half of the Parmesan cheese, half of the Swiss cheese, garlic, dried tarragon, salt, and pepper. Cook about 10 minutes, stirring frequently, or until the sauce has reduced and thickened.

  • Add the chicken and ham mixture, the mashed cauliflower, and the cheese sauce to a large casserole dish. Mix until well combined. Top with the remaining Parmesan cheese and Swiss cheese.
