  • 2 tablespoons butter
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground Italian sausage
  • 1 pound ground beef
  • 2 teaspoons Italian seasoning
  • salt & pepper
  • 4 cups beef broth
  • 2 cups marinara sauce
  • ½ cup heavy cream
  • ½ cup ricotta cheese

Optional garnish

  • ricotta cheese
  • shredded parmasean cheese
  • fresh basil

Instructions
 

  • In a large dutch oven or heavy pot over medium heat, melt the butter.

  • Add the onion and cook until it becomes translucent, about 5 minutes. Add garlic and cook another 30 seconds until fragrant.

  • Add the ground Italian sausage and ground beef. Cook until meat is no longer pink, breaking it up with a spatula. Season with Italian seasoning, salt, and pepper. Drain the grease.

  • Add the beef broth and marinara sauce. Bring to a boil, then lower the heat to simmer. Stir in the heavy cream and ricotta cheese.

We like the blend of ground beef and ground Italian sausage; it gives this soup a great depth of flavor! You can substitute all ground beef or all ground Italian sausage if preferred. Make sure the Italian sausage you choose doesn’t have any added sugar.

Vegetable variations

Marinara sauce

Check to make sure your marinara sauce doesn’t have any added sugar. We prefer to use Rao’s brand marinara sauce in all of our Italian based recipes.

Drain the grease!

Be sure to drain the grease after your meat has finished cooking in step 3 of this recipe. There’s a lot of fat in ground beef and ground Italian sausage, so if it’s not removed, your soup may taste greasy or oily.
