Low-carb sausage gravy [Keto]

Ingredients
- 1 pound ground breakfast sausage
- ½ teaspoon xanthan gum
- 1 teaspoon ground sage
- ⅛ teaspoon red pepper flakes, (optional)
- 1 cup chicken broth
- 2 cups heavy cream
- ½ teaspoon salt
- ½ teaspoon black pepper
Instructions
- In a large skillet over medium-high heat, cook breakfast sausage until no longer pink, breaking it up with a spoon or spatula. Drain the fat.
- Lower heat to medium-low. Sprinkle xanthan gum over meat and stir to combine. Add sage and red pepper flakes (optional). Slowly add the chicken broth, stirring frequently.
- Increase the heat to medium, and bring the broth to a low simmer. Stir frequently, until the mixture has thickened to a gravy-like consistency.
- Add the heavy cream and stir to combine. Bring the mixture back to a simmer, stirring frequently. Add salt and pepper. Continue simmering until the gravy has thickened. Remove from heat. Enjoy!
