Ingredients
 

  • 12 medium jalapeños, (3” long)
  • 1 cup cheddar cheese, shredded
  • 8 ounces cream cheese, softened
  • ½ teaspoon onion powder
  • cup fresh cilantro, finely chopped
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 slices bacon, (not thick cut), halved crosswise

Instructions
 

  • Preheat your oven to 400F/205C. Line a baking sheet with aluminum foil and place a wire baking rack on top.

  • Cut the jalapeños in half lengthwise. Use a small spoon to scoop out and discard the seeds. Set the halved jalapeños aside.

  • In a medium bowl, stir together the cheddar cheese, cream cheese, onion powder, cilantro, salt, and black pepper.

  • Fill each halved jalapeño with the cream cheese mixture.

  • Wrap a piece of bacon around the filled jalapeño. Use a toothpick to secure the bacon in place. Arrange the jalapeños evenly on the baking rack.

  • Bake for about 25 minutes, until the bacon is fully cooked. If bacon is not crispy, broil for an additional 1-2 minutes. Serve immediately. Enjoy!
