Ingredients
 

  • 6 slices bacon, cooked and crumbled
  • 1 head broccoli, (about 1 pound)
  • 1 head cauliflower, (about 1 pound)
  • 4 ounces cheddar cheese, cubed
  • ¾ cup sunflower seeds
  • ½ cup red onion, diced
  • ¾ cup mayonnaise
  • 1 tablespoon white wine vinegar
  • ½ tablespoon sweetener, (monk fruit/allulose blend is our favorite)
  • ½ teaspoon salt

Instructions
 

  • If your bacon is not already cooked, chop into small pieces and fry in a skillet. Once cooked, remove it to a paper towel-lined plate.

  • Chop the broccoli and cauliflower into bite-size pieces.

  • In a large bowl, combine the broccoli, cauliflower, bacon, cheddar cheese, sunflower seeds, and red onion. Stir until well mixed.

  • In a small bowl, add the mayonnaise, vinegar, sweetener, and salt. Stir until well mixed.

  • Add the dressing to the vegetables, toss until well combined.

  • Refrigerate for 2 hours before serving. Enjoy!
