Ingredients
 

  • 4 tablespoons butter, divided
  • 12 ounces ham steak, diced
  • 1 medium yellow onion, chopped
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 6 cups broccoli, chopped
  • 1 large carrot, grated or finely chopped
  • 3 cups heavy cream
  • 2 ½ cups sharp cheddar cheese, shredded
  • salt and black pepper, to taste
  • Garnish: shredded cheddar cheese, red pepper flakes

Instructions
 

  • In a large Dutch oven or stock pot over medium heat, melt 2 tablespoons butter. Add the ham and cook until lightly browned, about 3-4 minutes. Remove ham from the pot and set aside.

  • Melt the remaining 2 tablespoons of butter. Add the onion and garlic and saute for 3-4 minutes.

  • Add the chicken broth, scrape any browned bits from the bottom of the pot. Add the broccoli and carrots. Bring to a boil and reduce to a simmer. Simmer for 10 minutes.

  • Add the heavy cream and simmer for an additional 10 minutes.

  • Stir in the cheddar cheese and stir until melted. Taste, and season with salt and pepper. Simmer for an additional few minutes.

  • Return the ham to the pot, reserving some for garnish.

  • Garnish with reserved ham, cheddar cheese, and red pepper flakes (optional). Enjoy!
