- 8 pieces bacon, chopped
- 10 large eggs
- 1 cup bell pepper, diced
- ¼ cup yellow onion, diced
- salt and black pepper
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet onto a paper towel. Drain all but 1 tablespoon of grease. Whisk the eggs in a bowl until scrambled. Set aside.
Add the diced peppers and saute for 2-3 minutes. Add the onion and cook for another 2 minutes. Return the bacon to the skillet.
Add the eggs to the skillet and cook, stirring often, until the eggs are fully cooked. Season with salt and pepper to taste (optional). Enjoy!
