Ingredients
 

  • 8 pieces bacon, chopped
  • 10 large eggs
  • 1 cup bell pepper, diced
  • ¼ cup yellow onion, diced
  • salt and black pepper

Instructions
 

  • In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet onto a paper towel. Drain all but 1 tablespoon of grease.

  • Whisk the eggs in a bowl until scrambled. Set aside.

  • Add the diced peppers and saute for 2-3 minutes. Add the onion and cook for another 2 minutes. Return the bacon to the skillet.

  • Add the eggs to the skillet and cook, stirring often, until the eggs are fully cooked. Season with salt and pepper to taste (optional). Enjoy!
