Ingredients
 

  • 3 tablespoons olive oil
  • 1 pound green beans, trimmed
  • 2 large avocados
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 green onions, green parts diced
  • fresh cilantro, chopped (optional)

Instructions
 

  • In a large skillet, heat the oil over medium heat.

  • Cook the green beans for 3-5 minutes until they are crisp tender. Season with salt and pepper to taste (optional).

  • Add peeled and pitted avocados to a large mixing bowl. Season with salt and pepper and mash with a fork.

  • Mix the green onions into the avocado.
