- 3 tablespoons olive oil
- 1 pound green beans, trimmed
- 2 large avocados
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 green onions, green parts diced
- fresh cilantro, chopped (optional)
In a large skillet, heat the oil over medium heat. Cook the green beans for 3-5 minutes until they are crisp tender. Season with salt and pepper to taste (optional).
Add peeled and pitted avocados to a large mixing bowl. Season with salt and pepper and mash with a fork. Mix the green onions into the avocado.
Add the green beans and chopped cilantro (optional), stir until well combined. Enjoy!
