Ingredients
 

  • 6 slices bacon, chopped
  • 1 tablespoon butter
  • ½ cup yellow onion, chopped
  • ½ medium red bell pepper, chopped
  • 3 medium jalapeños, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon chili powder
  • 8 ounces cream cheese
  • ½ cup heavy cream
  • 2 cups cooked chicken breast, shredded
  • 1 cup pepper jack cheese, shredded
  • salt and black pepper, to taste
  • Garnish: bacon, sliced jalapeños, pepper jack cheese

Instructions
 

  • In a large pot over medium heat, cook the bacon until crispy. Transfer the bacon to a paper towel-lined plate, reserving the bacon grease.

  • Add the butter, onion, and red bell pepper to the pot and cook for 3-4 minutes, until softened. Add the jalapeños and garlic and cook for another minute.

  • Add the chicken broth, paprika, and chili powder. Bring to a boil and reduce to a low simmer.

  • Add the cream cheese and heavy cream and stir (or whisk) frequently until the cream cheese has incorporated into the broth.

  • Add the chicken and pepper jack cheese to the pot and stir to combine. Taste, and season with salt and pepper. Simmer for 15 minutes, stirring occasionally.

  • Serve and garnish with bacon, sliced jalapeños, and pepper jack cheese. Enjoy!
