- ½ pound bacon, chopped
- 1 pound ground beef
- 4 cups chicken broth
- 1 cup unsweetened almond milk, (or milk of choice)
- 1 head cauliflower, chopped into bite-size pieces (about 1 pound)
- 1 teaspoon dried parsley
- 1 cup heavy cream
- 2 cups cheddar cheese, shredded
- salt and black pepper, to taste
In a large Dutch oven or pot over medium heat, cook chopped bacon until crispy. Drain the grease. Add the ground beef, and cook for 8-10 minutes until browned, breaking the beef up with a wooden spoon. Drain excess grease (optional).
Add the chicken broth, almond milk, cauliflower, and dried parsley. Bring to a boil, then reduce to a simmer for 10-15 minutes until cauliflower is tender.
Remove from heat. Add the heavy cream and cheddar cheese. Stir until well combined and the cheese is melted. Taste, and season with salt and pepper.
Garnish with extra shredded cheese and parsley (optional). Enjoy!
