Sausage gravy
In a large skillet over medium-high heat, cook breakfast sausage until no longer pink, breaking it up with a spoon or spatula. Drain the fat.
Lower heat to medium-low. Sprinkle xanthan gum over meat and stir to combine. Add sage and red pepper flakes (optional). Slowly add the chicken broth, stirring frequently.
Increase the heat to medium, allow the meat to come to a simmer. Stir frequently, until the mixture has thickened to a gravy-like consistency.
Add the heavy cream, stir to combine. Bring the mixture back to a simmer, stirring frequently. Taste, and season with salt and pepper. Continue simmering until the gravy has thickened. Remove from heat.
Serving
Spoon sausage gravy generously over biscuits. Enjoy!
