2 ½ cups almond flour ½ cup sweetener , (monk fruit/allulose blend is our favorite ) 1 ½ teaspoons baking powder ¼ teaspoon salt ⅓ cup unsweetened almond milk , room temperature ⅓ cup coconut oil , melted 3 large eggs , room temperature ½ teaspoon vanilla extract 1 cup blueberries
Preheat the oven to 350F/177C. Line a muffin pan with 10 parchment paper muffin liners . In a large bowl , mix the almond flour, sweetener, baking powder, and salt. Add in the almond milk, melted coconut oil, eggs, and vanilla extract. Gently fold in the blueberries.
Divide the batter between the muffin cups.
Bake for 20 minutes, or until muffin tops are golden, and a toothpick inserted in the middle comes out with crumbs, not wet batter.
Transfer to a cooling rack . Enjoy!
