This low-carb cauliflower mac and cheese with smoked sausage is a delicious alternative to traditional mac and cheese. Made with cauliflower instead of traditional pasta, this recipe is a great option for those following a low-carb or keto diet. The addition of smoked sausage adds a smoky, savory flavor that complements the creamy cheese sauce perfectly. This dish is easy to make and is sure to satisfy even the pickiest eaters!

Ingredients
 

  • 1 pound cauliflower, chopped into bite-size pieces
  • 14 ounces smoked sausage, sliced
  • cup heavy cream
  • 2 ounces cream cheese
  • 1 ½ cups cheddar cheese, shredded and divided
  • cup pepper jack cheese, shredded
  • 1 teaspoon Cajun seasoning

Instructions
 

  • Preheat the oven to 350F/177C.

  • Bring a large saucepan of water to a boil. Add the cauliflower and boil for 5 minutes.

  • Meanwhile, in a large oven-safe skillet, brown the sausages (medium heat). Once cooked, transfer to a plate.

  • Drain the water from the cauliflower. Return cauliflower to saucepan and place over low heat.

  • Add heavy whipping cream, cream cheese, 1 cup of cheddar cheese, pepper jack cheese, and the Cajun seasoning. Stir often until the cheese has melted and everything is well combined.

  • Transfer cheesy cauliflower to the skillet used to cook the sausages. Add the sausages and gently stir to combine.

  • Sprinkle the remaining ½ cup of cheddar cheese over the top.

  • Bake for 15 minutes, or until cheese has melted and sauce is bubbling. Enjoy!
