- 6 large bell peppers
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1½ cups cauliflower rice
- 1 14.5 ounce can diced tomatoes
- 1 tablespoon tomato paste
- 1 cup Monterey jack cheese, shredded
- Garnish: chopped fresh parsley
Preheat the oven to 400F/205C
Cut the tops of the bell peppers off, de-seed, and remove excess membranes. Place the peppers in a baking dish. In a large skillet, over medium heat, heat the olive oil. Add the ground beef and cook until no longer pink, breaking the meat up with a wooden spatula. Add the salt, black pepper, paprika, dried oregano, chopped onion, and garlic. Cook until onions have softened, about 4-5 minutes.
Add the cauliflower rice, diced tomatoes, and tomato paste. Cook 5 minutes, stirring occasionally.
Divide the mixture between the peppers. Top with the cheese. Bake for 20-30 minutes until the peppers are tender and cheese has melted. (Bake time will depend on the size of your peppers).
Garnish with chopped fresh parsley. Enjoy!
