Low-carb zucchini noodle Alfredo with chicken and bacon

- 1 tablespoon olive oil
- 2 pounds chicken breast, cut into smaller pieces
- salt and black pepper
- ½ pound bacon, chopped
- ½ medium yellow onion, chopped
- 2 cloves garlic, minced
- ¼ cup white wine
- 1½ cups heavy cream
- 1 cup Parmesan cheese, shredded
- 4 large zucchini
- Garnish: bacon, Parmesan cheese, red pepper flakes
In a large skillet over medium heat, add the olive oil. Once hot, add the chicken in an even layer. Season with salt and black pepper. Cook undisturbed for about 4 minutes. Flip the chicken and cook for another 3-4 minutes until the chicken is fully cooked and the internal temperature is 165°F (74°C). Remove chicken to a plate and set aside. In the same skillet, cook the bacon until crispy. Remove bacon to a paper towel-lined plate.
Drain off the bacon grease, leaving about 2 tablespoons in the skillet. Add the onions and cook until soft, about 3-4 minutes, then add the garlic and cook for another 30 seconds. Add the wine and cook until the liquid has reduced by half.
Add the heavy cream and bring to a boil. Reduce heat to medium-low and add the Parmesan cheese. Cook for 1-2 minutes, stirring often. Add the chicken and continue to cook for another 1-2 minutes until the chicken is warmed and the sauce has thickened slightly.
Remove from heat and stir in bacon. Serve over zucchini noodles. Garnish with bacon, grated Parmesan cheese, and a pinch of red pepper flakes. Enjoy!
