Ingredients
 

Salmon

  • 4 salmon fillets, with or without skin
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • salt and black pepper

Creamy artichoke sauce

  • 4 tablespoons olive oil, divided
  • 1 cup yellow onion, diced
  • 4 cloves garlic, minced
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • ½ teaspoon crushed red pepper flakes
  • 1 ½ cups heavy cream
  • 2 ounces cream cheese
  • ¼ cup Parmesan cheese, shredded
  • 4 ounces spinach
  • 12 ounces marinated artichoke hearts, drained and chopped

Instructions
 

  • Season the salmon with paprika, onion powder, salt, and pepper.

  • In a large skillet over medium heat, heat 1 tablespoon olive oil. Add the salmon, and sear for 2-3 minutes. Remove salmon to a plate.

  • Add the remaining 3 tablespoons of olive oil, onion, garlic, parsley, thyme, and red pepper flakes. Cook until onions are translucent, about 5-6 minutes.

  • Add the heavy cream, cream cheese, and the parmesan cheese. Bring to a simmer, stirring often.

  • Add the spinach and artichoke hearts. Cook until spinach is wilted. Add the lemon juice, stir to combine.

  • Return the salmon to the skillet. Cook until salmon is fully cooked, about 10 minutes, stirring occasionally. Enjoy!
