Ingredients
Salmon
4salmon fillets, with or without skin
1teaspoonsmoked paprika
½teaspoononion powder
salt and black pepper
Creamy artichoke sauce
4tablespoonsolive oil, divided
1cupyellow onion, diced
4clovesgarlic, minced
1teaspoondried parsley
1teaspoondried thyme
½teaspooncrushed red pepper flakes
1 ½cupsheavy cream
2ouncescream cheese
¼cupParmesan cheese, shredded
4ouncesspinach
12ouncesmarinated artichoke hearts, drained and chopped
Instructions
Season the salmon with paprika, onion powder, salt, and pepper.
In a large skillet over medium heat, heat 1 tablespoon olive oil. Add the salmon, and sear for 2-3 minutes. Remove salmon to a plate.
Add the remaining 3 tablespoons of olive oil, onion, garlic, parsley, thyme, and red pepper flakes. Cook until onions are translucent, about 5-6 minutes.
Add the heavy cream, cream cheese, and the parmesan cheese. Bring to a simmer, stirring often.
Add the spinach and artichoke hearts. Cook until spinach is wilted. Add the lemon juice, stir to combine.
