Ingredients
 

  • ¾ pound sweet potato, thinly sliced
  • 1 pound smoked sausage, sliced
  • 1 medium sweet onion, sliced
  • olive oil sprayer
  • 2 teaspoons Italian seasoning
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Garnish: chopped fresh parsley

Instructions
 

  • Preheat the oven to 375F/190C.

  • On a baking sheet lined with parchment paper, evenly distribute the smoked sausage, sweet potatoes, and onions.

  • Generously spray with olive oil over all ingredients, making sure everything is coated.

  • Sprinkle with paprika, Italian seasoning, salt, and pepper. Bake for 15 minutes.

  • Remove from oven, stir, and bake for another 10 minutes.
