Beef tenderloin roast
- 4-5 pound beef tenderloin roast, trimmed and tied
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
Garlic herb butter
- 6 tablespoons butter, softened
- 6 cloves garlic, minced
- 1 teaspoon fresh rosemary, finely chopped
Remove the beef tenderloin from the fridge and let it sit at room temperature for 1 to 2 hours before cooking.
Preheat your oven to 425°F (220°C).
In a small bowl, mix together the softened butter, garlic, and rosemary. Set aside. If not already tied, use kitchen twine to tie the beef tenderloin. Pat dry with paper towels and season all sides with salt and black pepper. In a large oven-proof skillet over medium-high heat, heat the olive oil. Sear the beef tenderloin on all sides for 3 to 5 minutes per side until a golden crust forms. Spread the garlic herb butter over the tenderloin. Insert a probe thermometer into the thickest part of the roast and transfer the skillet to the oven. Roast until the beef reaches your desired internal temperature, about 15 to 20 minutes. *See the temperature notes below. Remove the roast from the oven and place it on a cutting board. Let rest for 10 to 15 minutes.
Remove the twine, and slice into 1” thick pieces. Serve with horseradish sauce. Enjoy!
