- ⅛ cup fresh cilantro, finely chopped
- ½ teaspoon salt

Notes
- You can eat this salad right after making it if you’re short on time and don’t have time for it to sit in the refrigerator. We find the flavor is richer, and the taste is better overall when the dish has been refrigerated for at least a couple of hours.
- If you don’t have white wine vinegar, you can substitute red wine vinegar, apple cider vinegar, or even regular white distilled vinegar.
- This side dish pairs well with any protein. During the summer months, we love to grill meat most nights (chicken, steak, burgers, shrimp, etc.), and this side dish compliments any protein we’ve paired with it. You can also turn this side dish into a main dish by adding protein directly to the salad.

Enter our irresistible low-carb bacon-wrapped jalapeño poppers – a delightful fusion of spicy jalapeños, creamy cheese, and savory bacon that promises to tantalize taste buds and satisfy cravings without compromising on health.
Jalapeño poppers are a beloved appetizer known for their spicy kick and creamy filling. Traditionally, these poppers are breaded and deep-fried, resulting in a crispy exterior and gooey interior. However, for those looking to reduce their carb intake or manage their blood sugar levels, this classic recipe may not be the most suitable option. That’s where our low-carb twist comes in – by swapping out the breading for bacon and opting for a creamy cheese filling, we’ve created a healthier alternative that’s just as indulgent and flavorful.
Preparation Tips
- Choose the Right Jalapeños: Look for medium-sized jalapeños that are firm and free of blemishes. Avoid overly large jalapeños, as they may be too spicy for some palates.
- Handle with Care: When working with jalapeños, it’s essential to wear gloves to protect your hands from the spicy oils. Be sure to wash your hands thoroughly after handling jalapeños to avoid any irritation.
- Customize the Filling: While our recipe calls for a simple cream cheese filling with cilantro and cheddar cheese, feel free to get creative and customize the filling to suit your taste preferences. Add diced bell peppers, green onions, or cooked crumbled sausage for an extra burst of flavor.
- Secure with Toothpicks: To ensure that the bacon stays in place while baking, use toothpicks to secure it around the filled jalapeños. Be sure to remove the toothpicks before serving to avoid any accidental injuries.

- Cheesy Jalapeño Popper Dip: Turn the flavors of our poppers into a creamy dip by blending the cream cheese filling with sour cream and additional shredded cheddar cheese until smooth and creamy. Serve the dip alongside crispy bacon slices and sliced jalapeños for dipping.
- Buffalo Chicken: Combine cooked shredded chicken with buffalo sauce and blue cheese crumbles, then use this mixture to fill the jalapeño halves before wrapping them in bacon. These buffalo chicken jalapeño poppers are sure to be a hit at your next game-day gathering.
- Vegetarian Option: Skip the bacon altogether and stuff the jalapeño halves with a mixture of cream cheese, diced bell peppers, and black beans seasoned with taco seasoning. Top with shredded cheese before baking for a delicious vegetarian-friendly twist on our classic recipe.
