Low-Carb Broccoli Cauliflower Salad

Ingredients
- 6 slices bacon, cooked and crumbled
- 1 head broccoli, (about 1 pound)
- 1 head cauliflower, (about 1 pound)
- 4 ounces cheddar cheese, cubed
- ¾ cup sunflower seeds
- ½ cup red onion, diced
- ¾ cup mayonnaise
- 1 tablespoon white wine vinegar
- ½ tablespoon monk fruit, (or sweetener of choice)
- ½ teaspoon salt
Instructions
- If your bacon is not already cooked, chop into small pieces and fry in a skillet. Once cooked, remove it to a paper towel-lined plate.
- Chop the broccoli and cauliflower into bite-size pieces.
- In a large bowl, combine the broccoli, cauliflower, bacon, cheddar cheese, sunflower seeds, and red onion. Stir until well mixed.
- In a small bowl, add the mayonnaise, vinegar, monk fruit, and salt. Stir until well mixed.
- Add the dressing to the vegetables, toss until well combined.
- Refrigerate for 2 hours before serving. Enjoy!
