Low-Carb Creamy Broccoli with Bacon

Ingredients
- 6 strips bacon, chopped into small pieces
- 4 cloves garlic, minced
- 6 cups broccoli, chopped into bite size pieces
- 1 cup heavy cream
- ½ cup mozzarella cheese, shredded
- ¼ cup parmesan cheese, grated
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- In a large skillet over medium heat, cook the chopped bacon until fully cooked and crisp. Remove bacon to a paper towel-lined plate. Do not discard the bacon grease.
- Cook the garlic until fragrant and lightly browned, about 30 seconds.
- Add the chopped broccoli, saute for a few minutes until the broccoli is bright green and crisp-tender.
- Add the heavy cream, mozzarella cheese, parmesan cheese, salt, and pepper. Stir to combine. Simmer for 3-4 minutes until the cheese sauce has thickened and the broccoli is fully cooked.
- Return the cooked bacon to the pan and stir until well combined. Remove from heat. Enjoy!
