Ingredients
Salmon
- 4 4 salmon fillets with or without skin
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- salt and black pepper
Creamy artichoke sauce
- 4 tablespoons olive oil, divided
- 1 cup onion, diced
- 4 cloves garlic, minced
- 1 teaspoon dried parsley
- 1 teaspoon dried thyme
- ½ teaspoon red pepper flakes
- 1 ½ cups heavy cream
- 2 ounces cream cheese
- ¼ cup parmasean cheese, shredded
- 4 ounces spinach
- 12 ounces marinated artichoke hearts, drained and chopped
Instructions
- Season the salmon with paprika, onion powder, salt, and pepper.
- In a large skillet over medium heat, heat 1 tablespoon olive oil. Add the salmon, and sear for 2-3 minutes. Remove salmon to a plate.
- Add the remaining 3 tablespoons of olive oil, onion, garlic, parsley, thyme, and red pepper flakes. Cook until onions are translucent, about 5-6 minutes.
- Add the heavy cream, cream cheese, and the parmesan cheese. Bring to a simmer, stirring often.
- Add the spinach and artichoke hearts. Cook until spinach is wilted. Add the lemon juice, stir to combine.
- Return the salmon to the skillet. Cook until salmon is fully cooked, about 10 minutes, stirring occasionally. Enjoy!
