Shrimp

  • 1 pound large raw shrimp, peeled and deveined, tails removed
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Cabbage Slaw

  • 8 ounces bacon, chopped
  • 3 cups green cabbage, shredded
  • salt and black pepper to taste

Cilantro Lime Sauce

  • ½ cup sour cream
  • ¼ cup olive oil
  • ½ cup cilantro leaves, roughly chopped
  • ¼ cup water
  • 3 cloves garlic
  • ½ teaspoon salt
  • juice of 2 limes

Assembly & Garnish

  • Low-carb tortillas
  • Avocado, sliced
  • Chopped cilantro leaves

Instructions
 

  • In a skillet over medium heat, fry the chopped bacon until fully cooked. Remove cooked bacon onto a paper-towel lined plate.

  • In a medium bowl, mix the shrimp, olive oil, chili powder, ground cumin, salt, and pepper, until well coated.

  • In the same skillet used to cook the bacon, cook the shrimp on each side for 1-2 minutes, or until fully cooked.

  • Add all of the ingredients for the cilantro lime sauce to a blender, and blend until smooth.

  • In a large bowl, add the cabbage, bacon, and half of the cilantro lime sauce (reserve the remainder of the sauce for garnish). Salt and pepper to taste.
