Low-Carb Broccoli Ham and Cheese Soup [Keto]

Ingredients
- 4 tablespoons butter, divided
- 12 ounces fully cooked ham steak, diced
- 1 medium yellow onion, chopped
- 4 cloves garlic, minced
- 6 cups chicken broth
- 6 cups broccoli, chopped
- 1 large carrot, grated or finely chopped
- 1 teaspoon salt
- ½ teaspoon black pepper
- 3 cups heavy cream
- 2 ½ cups sharp cheddar cheese, shredded
Garnish
- Shredded cheddar cheese
- Red pepper flakes
Instructions
- In a large Dutch oven or stock pot over medium heat, melt 2 tablespoons butter. Add the ham and cook until lightly browned, about 3-4 minutes. Remove ham from the pot and set aside.
- Melt the remaining 2 tablespoons of butter. Add the onion and garlic and saute for 3-4 minutes.
- Add the chicken broth, scrape any browned bits from the bottom of the pot. Add the broccoli, carrots, salt, and black pepper. Bring to a boil and reduce to a simmer. Simmer for 10 minutes.
- Add the heavy cream and simmer for an additional 10 minutes.
- Stir in the cheddar cheese and stir until melted. Simmer for an additional few minutes.
- Return the ham to the pot, reserving some for garnish.
- Garnish with reserved ham, cheddar cheese, and red pepper flakes (optional). Enjoy!
