Low-carb creamy Cajun chicken soup [Keto]

Ingredients
- ½ pound bacon, chopped
- 4 cloves garlic, minced
- 1 jalapeño, finely chopped
- 4 cups chicken broth
- 2 pounds chicken breast
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried parsley
- 1 teaspoon onion powder
- 1 teaspoon dried chives
- 1 teaspoon dried dill
- 8 ounces cream cheese, softened
- ½ cup white cheddar cheese, shredded
- 1 cup heavy cream
- 2 cups spinach
Garnish: Sliced jalapeños, cilantro, shredded white cheddar cheese
Instructions
- In a large pot over medium heat, fry the bacon until crispy. Transfer cooked bacon to a paper towel lined plate. Drain off all but 1 tablespoon of bacon grease.
- Add the garlic and jalapeño and saute for 1-2 minutes. Add the chicken broth and bring to a boil.
- Add the chicken, and cook until the internal temperature of the chicken reaches 165F/74C. Remove the chicken and shred.
- Lower heat to medium. Add the Cajun seasoning, half of the cooked bacon, dried parsley, onion powder, dried chives, dried dill, cream cheese, white cheddar cheese, and heavy cream. Stir frequently until the cheese is melted and well combined.
- Return the shredded chicken to the pot, along with the spinach. Stir frequently until the spinach has wilted. Taste and add additional Cajun seasoning if needed. Remove from heat.
- Garnish with bacon, sliced jalapeños, cilantro, and white cheddar cheese. Enjoy!
